Why Don't You... Make Some Coconut Pancakes?

I love almost anything coconut. So much so, I created an entire Pinterest board dedicated to coconut. And whyI love this new discovery from Trader Joe's...

Just add water... And three minutes later I have pancakes with toasted coconut throughout them?

 
Yum!

Sometimes, I eat them for dinner. I can get about six meals out of one box. It' faster for me to cook these than some eggs for dinner most evenings. And more fulfilling.

There are may things that people get excited about from Trader Joe's... Cookie Butter. Seaweed Snacks. Cookie Butter Ice Cream. Grapples. Hummus. Dark Chocolate with Sea Salt.

Those are all lame compared to the pancake mix. The coconut pancake mix.

Why don't make some too?
