Haters Gonna Hate: The Best Pumpkin Spice Granola Recipe.

I've been experimenting with granola recipes for over eight years.

And throughout that time, I discovered that I really don't like dried fruit in my granola.

Nope.

While it's pretty seeing golden raisins, plummy raisins, dried cherries, or dried cranberries in the Earthy mixture... I really can't stand the taste the texture of them. In fact, I often pick them out.

So about two years ago, I stopped putting it in my recipe. And since then, I've come up with my most delicious version of Pumpkin Spice Granola to date.

It begins with the following...


Ingredients:
  • 3 cups of rolled oats
  • 1 cup of slivered almonds
  • 1 cup of raw pumpkin seeds
  • 1 cup of chopped walnuts
  • 1/2 cup brown sugar
  • 1/2 cup of Extra Virgin Olive Oil
  • 3/4 cup of maple syrup
  • 1 cup of toasted coconut chips from Trader Joe's
  • 1 tsp of salt
  • 1/4 tsp of pumpkin spice
  • 1/2 tsp of cinnamon


You don't have to get your coconut chips from Trader Joe's. But the unsweetened roasted ones are AMAZING! You could also use shredded coconut that you toast gently in a pan on the stove.

Directions:
Preheat oven to 300 degrees.

Mix all the nuts and oats together in a big ass bowl, leaving the coconut out of it.


Then whisk all of the wet ingredients, spices, and sugar together in a separate bowl.


Pour the wet ingredients into the dry ingredients' bowl.


Mix that shit together real good. Then spread out onto a parchment-lined rimmed cookie sheet.


After baking in the oven for 15 minutes, pull it out and toss the mixture around on the sheet with a spatula. Make sure you are getting whatever was on the bottom of the pan onto the top. Reflatten out, and stick back in the oven for another 15-20 minutes.

Then pull out and drag the parchment, with the mixture on it, onto a baking rack.


This will allow the mixture to cool and harden a little.

After about 30 minutes, dump it into another big ass bowl, and add the coconut.


Gently fold that shit together.


And there you have it...


The Best Pumpkin Spice Granola in this Universe. Store in airtight containers. And enjoy eating it as all of your hipster friends bust on you for continuing to like pumpkin spice shit.  

They're probably boring friends any damn way that you should get rid of.
