Sunday Supper: Chilean Seabass With Lemon Butter.
I do love roasted potatoes. But similar to cookies that I bake, they must be fresh in order for me to eat them.
Otherwise it's a "no."
Seriously.
I have a container of leftover fingerling potatoes I roasted this past Sunday... And I likely will not touch them.
If I do, I will put them in the oven to re-roast.
"What do you eat during the week if you don't cook?"
Toast. I'm big on toast. Today I ate some Skyr with chia seeds and blueberries. Yesterday I ordered a Crunchwrap from Taco Bell, ate half of it, and then had a bowl of Cap'n Crunch.
Cereal is the best.
My fridge is loaded with condiments, carrot sticks, vitamins/medications, sparkling water, and poached chicken for George.
Yes, I cook for my dog more legitimately than I cook for me.
She gets poached chicken - about a cup - each morning for breakfast. I also give her two probiotic treats with it. Then for supper, about 10 hours later, she gets a few cubes of poached chicken with a "stew" made from some dehydrated (which I rehydrate) organic chicken powder loaded with omega fats and bits of veggies.
She loves it and has not turned her nose up at it in the three months I have been giving it to her - unlike the Blue Buffalo dog food I have been trying to feed her for years and she hated.
On days when I've run out of or forgotten to make the chicken, I make her eggs. Scrambled eggs.
But regardless, I will likely only be "cooking" for myself on Sundays.
Every other meal will either be toast.... Cereal... Skyr... Or a burrito.
But definitely not a Crunchwrap.
And probably not Chilean Seabass. Because while it was tasty, I was bored two bites into it.
But it made for an aesthetically-pleasing photo.
