Only by request... I am posting a recipe for a seasonal vegetable that I had for dinner.
Fiddleheads.

Ingredients:
- 10 ounces of fiddleheads, washed and with the brown edge of the stem cut off
- 1 small red onion, sliced into long strips
- 2 tsp olive oil
Instructions:
- Boil some water in a pot.
- Drop rinsed fiddleheads in and let cook for a minute.
- Drain fiddleheads and rinse with COLD water.
- Heat oil in saute pan.
- Throw onion in and cook for three minutes.
- Toss fiddleheads in and cook for another five minutes.
And you're done. I don't use salt in this. But I did add a pinch of crushed red pepper towards the end of the cooking.
They taste like Spring!!!

I have seen these everywhere lately but have NEVER heard of them... I hate to sound like a stupid california girl but are these new? What do they taste like?
LOL! I only saw them for the first time three years ago. And then saw them for a second time today at WHole Foods.
They taste "earthy." Definitely like a vegetable. Like grass. I liked them. And The Husband ate them up with no complaints.
They are only in season for a short while.
Dang I was hoping you would say they taste like green beans. Green Beans I could do, Grass, not so much. BUT, I will try them, just because you made them sound yummy. for grass. lol
That is one healthy plate of food.
They look good. I don't have a "Whole Paycheck" near me though and I doubt our local Stop & Shop would carry them. Hmmmmm......
