Baked Risotto.
I am not one for standing over a stove and continuously stirring a pot of risotto.
I love risotto, make no mistake. But it is far too time-consuming for me to make if I have to be trapped to a stove for an hour. That is why I adore, and have adored, this recipe for Baked Risotto from Martha Stewart Everyday Food for the past six years.
So easy to make. And it allows me to step out of the kitchen and fold some laundry. And drink some wine.
I paired it with some roasted zucchini. It was delicious!
