Healthy Dish For The Weak: Mahi Mahi & Peanut Soba Noodles.

I have been dying to try this dish out for a few days. It's a new one I have come up with... "Mahi Mahi & Peanut Soba Noodles."



Yummy!

The inspiration came from a recipe I found in the latest issue of Everyday Food.

Ingredients:
  • 6 ounces of soba noodles
  • 2 mahi mahi fillets
  • 2 cloves of garlic, minced
  • 3 table spoons of soy sauce
  • 1/2 table spoon safflower oil
  • 1 tablespoon extra virgin olive oil
  • 1 palm-full of chopped peanuts
  • 1 tablespoon chopped mint leaves
  • 1/2 cup of cucumber slices, thin
  • 1 scallion

Directions:
  1. Bring pot of water to a boil, cook soba noodles for 5 minutes. Pull out and rinse under cold water. Set aside.
  2. While cooking the noodles, heat the olive oil over medium-high heat. Throw the mahi mahi in, along with the garlic. Dribble two tablespoons of soy sauce over the fillets. Flip halfway through cooking, which is about three minutes per side.
  3. Mix the safflower oil and the remaining soy sauce in a bowl. Throw in the mint, peanuts, scallions, cucumber and noodles. Toss till coated.
  4. Plate the noodles and the mahi mahi. Then eat.

This is a VERY healthy meal. I don't know the exact calorie count, but it is very good for you. It's less than 500 for the meal, I know that much. And it is enough to serve one short female and one freakishly large Canadian.
