Healthy Dish For The Weak: Prosciutto-Wrapped Chicken.

A new recipe tried out tonight... Prosciutto-Wrapped Chicken with a mixture of Yukon Gold Potatoes and Zucchini.



So yummy! So easy to make too!

For the chicken:
  • Pre-heat broiler in oven.
  • Wrap chicken breasts with a slice of prosciutto.
  • Place in the oven for 20 to 25 minutes.
  • *Be careful and check the chicken every few minutes. Also, don't place the oven shelf right under the broiler. Put it down a few slots so the chicken isn't so close to the open flame.
For the vegetables:
  • Slice up three small-ish Yukon Gold potatoes, and one medium-sized zucchini.
  • Heat skillet on a medium-high flame, with a tablespoon of olive oil.
  • Throw potatoes into the skillet and cook for about 10 minutes.
  • Throw the zucchini into the skillet. (It cooks faster, and therefore goes in when the potatoes are almost done.)
  • Mix the veggie goodness all together. Season to taste.
Very easy, and it all came together in less than 30 minutes.
