Comfort Food: Meatloaf.

I hadn't had meatloaf in ages!  And with me being sick today, I needed comfort food.  Warm comfort food.  Stuff that takes time to fix.  Stuff that, until recently, I didn't have time to fix.

So I improvised a meatloaf recipe*, made some mashed potatoes from scratch and pan roasted some zucchini to go with it...

*Meatloaf
  • 1/2 pound of ground beef
  • 1 cup of chopped white mushrooms
  • 1 tsp Dijon mustard
  • 1 tsp soy sauce
  • 1/2 tsp dried sage
  • 1/3 cup of oatmeal
  • 1/4 cup of  small yellow onion, chopped small
  • 1 clove of garlic
  • Splash of soy milk
Preheat oven to 350 degrees.  Mix all ingredients in a bowl with your hands.  Pile into a sprayed loaf pan.  Cook for about 50 minutes.
