Packing Lunch.

I'm trying to be good in this new year about bringing my lunch to work.

Normally, I spend about $10 on lunch... And it usually is not the healthiest of lunches. So, in an effort to be more healthy with my lunch, and to save some $$$ each week, I am packing it most days. And my selection for today is a frozen meal by Kashi - Lemongrass Coconut Chicken.



I can hear all that money I'm saving just adding up in my bank account. Yay!

I'm soooo picky about the chicken I eat. I haven't found any in a frozen meal like that which I would actually eat. You'll have to tell me how this one is, it sounds really good!

Yep. Working today. My company (which is UK based) give us a ton of time off each year. And we get the major holidays off automatically (New Year's Day, Memorial Day, July 4th, Labor Day, Thanksgiving Day & Christmas Day)...

But any days other than those require us taking one of the 20+ vacation days we get.

I tend to always bring a lunch to work with me. How was the Kashi meal? I love their meal bars and cereal!

I've found a great quick lunch option: a quickly made egg/kale/goat cheese fritatta in the evening and cut into wedges for lunch with fruit. I pack it into a ziploc and if I want to warm it a bit, I can but it's still really good cold too.

The Kashi meal was delish. And, it was really filling. I barely had room for my Larabar afterwards.

the girls at work and i have started a new "lunch club" (yes, i know this totally sounds high school, but whatever).

we agreed to bring our lunches 4x a week and then on fridays we get to go out to lunch together. no where super fancy, but nicer than sebastian's or ABP -- saves money, and we have a support group for not eating out everyday...
